Vida chefs share dishes to celebrate the summer tomato

According to the Indiana Harvest Calendar, Indiana tomatoes are the most ripe and fresh between July 10 - September 15, and we are right in the thick of that!

Vida's Executive Chef Thomas Melvin & Chef Matt Gering prepare two dishes celebrating the summer tomato: 

* Tomato Tart with humbolt fog, caramelized onion, basil (currently featured on the Chef's Tasting menu)
* Pork Collar with peach-tomato salad, sauteed greens, carrot-potato, bacon jus
